A Brunchy Lunch at Redroaster Coffee Co in Brighton

Before hitting up Brighton over the last Bank Holiday weekend with the always lovely Laura Patricia Rose, I'd made a list of places I wanted to visit mainly based on recommendations from fellow bloggers and vloggers. One I'd come across was Redroaster Coffee Co, a café and lunch room that with marbled tables and a leafy green interior, provided the perfect backdrop for some very Instagram-worthy snaps, not to mention a delicious brunch to boot.

As soon as we walked inside the botanical inspired coffee house, we knew why people love it so much; this place looked beautiful! I loved the very simple colour scheme of white and greens, which provided the perfect serene backdrop to a relaxing lunch to wind down from a busy morning exploring Brighton. And when I opened the menu prepared by Michellin-starred chef Matt Gillan I fell just a tad more in love. All dishes were brunch ones, but with a twist. For example waffles with bacon jam, and eggs Benedict with a hazelnut dressing. Yum.

While it was tough to choose between the many dishes that made my mouth water by just reading about them, eventually I opted for the Tea Cured Salmon, Matcha Waffle, Semi-Dried Tomato, Yuzu Cream Cheese and Calamari, with a refreshing Fresh Passion Fruit Fizz (made up of passion fruit pulp, soda, squashed lime, edible flowers and syrup) on the side. Laura choose the Breakfast Board, which consisted of Boiled Eggs, Sourdough, Avocado, House Granola and Green Juice.

When the plates came we were in awe. They were so beautiful and colourful and it was almost a shame to dig into them (but dig in we did). I'd never had matcha in a waffle before, nor had I considered combining salmon with sun-dried tomato or yuzu but my gosh, the dish was gorgeous! Just thinking about it I want to go back right now to have it again ♥ It was a tad on the small side for a full-on lunch, but since we weren't super hungry that was okay. Had we build up an appetite, however, we probably would've gotten desserts too because they looked divine.

I absolutely loved my visit to Redroaster, from its beautiful inside to its gorgeous food. While yes, it is a place bloggers, vloggers and Instagrammers flock to for its on-point interior design that looks great in a shot – it are the scrumptious brunchy drinks and dishes with healthy add-ons to create inspiring twists on the classics that will have me return on my next visit to Brighton.

Redroaster Coffee Co is located on 1d St. James Street in Kemptown, Brighton (just a few minutes walk away from the Pier). They're open 7am-5pm and they transform into restaurant Pike & Pine at night.
